Broccoli and Cheese Stuffed Chicken

Ingredients:

-2 Chicken breast- or for however many people you need to feed

-1-2 heads of broccoli (I did one for 2 chicken breast)

-½-1 cup of extra sharp cheddar cheese (I did about ½ cup for 2 breast)

-¼-½ cup cream cheese softened (I used ¼ cup for 2 breast)

-teaspoon of ranch seasoning (or more if you enjoy it)

-salt

-pepper

Directions:

-preheat oven to 350

-Chop the broccoli into small bite pieces

-mix the broccoli, cream cheese, extra cheddar cheese, ranch, salt, pepper

-cut a “pocket” into the chicken breast

-stuff the broccoli cheese mixture into the pocket (if you have extra just roll into broccoli cheese balls and cook next the chicken in the oven- so yummy!)

*you may want to put a tooth pick through the chicken to hold it together

-add olive oil, salt and pepper to the outside of the chicken

-cook for 20 minutes or until chicken is 165
