We had this for dinner on Monday night and it was SOOO good. It is really simple and easy to make but it had a whole bunch of flavor (especially if you like pesto!). Adding the lemon and toasted pine nuts truly made the dish a complete flavor profile. The lemon added a fresh citrus taste to compliment the basil and garlic in the pesto sauce. I just love pine nuts on top of a lot of things, pasta and salads especially.
Recipe:
Ingredients
-1lb. Chicken Breast (will be seasoned with salt, pepper and Italian seasoning- or sub RecTec Greek seasoning)
-1lb. Asparagus (seasoned with salt, pepper and olive oil)
-1 box of noodles- your choice (use spaghetti squash for a healthier, low carb option)
-Pesto of your choice (homemade or store bought)
-1/2 lemon, squeezed
-Handful of toasted pine nuts
-1/3 cup of shredded Parmesan
Instructions
-Turn grill on to 350F, while grill is heating up season chicken breast and asparagus (make sure woody ends are off)
-When grill is ready, place chicken and asparagus on the grill- cook chicken to an internal temperature of 165 (make sure to flip on both sides) and cook asparagus till desired crunchiness (I prefer mine harder, so about 3-5 minutes a side)
-While chicken and asparagus are cooking, cook noodles (follow directions on the box)
-Pull chicken and asparagus off the grill and cut into bit sized chunks (let chicken rest for 10 minutes prior to cutting)
-Mix together noodles, chicken, asparagus in large bowl then add the pesto, cheese and lemon juice. Mix together thoroughly
-Top with cheese and toasted pine nuts
