Spicy Stuffed Balsamic Peppers

Ingredients:

4 peppers

1.5 pounds of hot sausage

2 tablespoons of balsamic vinegar

¼ cup balsamic vinegar

1 small sweet onion

2 cloves of garlic (minced)

½ cup mozzarella shredded

Handful of shredded Parmesan

Olive oil

Salt


Directions:

-Heat oven to 400F

-Half your peppers and place them skin side up, put olive oil and salt on them

-Bake for 20 minutes or until tender

-Once those are done you are doing to reduce oven temp to 350

-Dice small onion and cook in olive oil until tender then add the two cloves to garlic for about a minute.

-Add the spicy sausage and cook through then turn heat up to high and add 2 tablespoons of balsamic for about 1-2 minutes until it's absorbed. -Then remove from heat and drain fat/oil

-Cook ¼ cup of balsamic on low-medium heat until reduced to ½ the size

-When peppers are done, flip over and stuff with the meat and cover with cheese. Then cook on 350 for 10-20 minutes or until cheese melts (took us about 12 minutes- i cooked on the grill)

-Then top with balsamic
